Breakfast for Supper

I grew up in a modest home with seven siblings. Let's just say, there wasn't a lot of money floating around. I was only 6 years old when everyone lived under the same roof (before the older generation of kids left the nest), yet I still have very fond memories of those days. Even though money was probably at it's scarcest, those years were the prime of my life! The best part was when we would have BREAKFAST for SUPPER. Those. Were. The. Days! I loved coming upstairs to the kitchen to see Dad making his pancake batter, or Mom making her apple fritters.

It was a magical time for a 6 year old.

This week, the plague has fallen on our household (except, Tanner, because he is a Demigod). So Gwen and I have been really sick. And when you and your toddler are sick in the house all day, there a few things that get neglected. Dishes; we are down to our last clean spoon and fork. Laundry; Tanner has been wearing the same pair of pants to work this entire week, because all his other pairs are dirty. Floors; carpets and linoleum, neither have seen a broom or vacuum this week....gross. Grocery shopping; we are running on fumes.

Tonight I had the challenge of finding something to eat for supper. Something simple, too. Our meal calender says that we were supposed to have chicken enchiladas, but I wasn't about to make a huge meal. I asked Tanner if it was okay if I made something simple, like eggs. He was fine with that (but really, it didn't matter if her was fine with it or not, we were having eggs). I came up with what I call "Eggs Over MiHAMi" They turned out looking great and tasted great too.

I love having breakfast for supper.


But still, our house is in shambles. In a desperate plea for help, I called up my folks, and I am so glad I did. They are coming here today to help me with Gwen and they house and are even bringing us supper! (as much as I like breakfast suppers) YAY! Parent's (and parents-in-law) are the BEST! We get so spoiled sometimes. We love you!
